
Ingredients (For 1 Person)
1 portions of fettuccini
extra virgin olive oil
1 cloves of garlic, finely sliced
1/4 an onion, cubed
1/2 cup of white wine
1/4 cup of chicken stock
1 tablespoons of basil, finely chopped
1 cups of sliced mushrooms
1 tablespoons of Cream

Directions
1) Boil some salted water for your fettuccini (about 3L with 2 tbsp of salt), and add the pasta when the water is ready.
2) Heat some extra virgin olive oil in a frying pan.
3) Add the garlic and fry until lightly browned.
4) Add the onion and continue frying until translucent.
5) Add the mushrooms and continue frying until they start to brown.
6) Add the white wine and bring to a simmer. Simmer until reduced by half.
7) Add the cream and stir to combine.
8) Simmer for a minute until the sauce thickens.
9) Your fettuccini should be ready about now. Drain and add to your sauce in the pan and stir to combine.
10) Serve with freshly grated parmesan and some cracked pepper, and a glass of white wine!
